    I buy a head of cauliflower...cut it in 4 big chunks and break off the flower pieces. Put the pieces in a bowl and Coat with oil, lightly, salt pepper and nothing else although I add a bit of thyme and red pepper flakes. Use your hand to mix it all and put on a sheet pan. I like to get it browned and I like crunchy parts so I put aluminum foil on pan and sprayed with oil.....that avoids cleanup but also letís the cauliflower get some browning. (Parchment paper does not work as well in this recipe). I cut the cauliflower flowers in half as smaller pieces cook faster and there is more surface to get crunchy pieces.

    After 20 minutes on high heat you can find it easy to push in the tip of a knife. But I watch until it just begins browning and take it out when I am satisfied. Maybe a minute or two more.

    Sounds like a great way to do cauliflower! And getting to that concert was inspired!

    I watched something like that on YouTube with cauliflower. I did it a couple of times. One time I mashed it like potatoes. I could hardly tell it from potatoes. The reason I didnít do it more was because it took too long standing to prepare it.

    I was a true queenager last Saturday.
    Details: have been so housebound for months...won a ticket to a matinee concert at Smith College....afraid I would cough throughout an aria from Carmen....it was very cold...too tired to drive...oh hell...I am going. What to wear? What to do with my unshaped hair? Ok..the fix? Mary had given me a hat so I would wear it and just not take it off. Left black pajama bottoms on, put a great long sweater over pajama top....dragged out an old coat that is 2 sizes too big and goes to my ankles...what a picture!

    But I got there...sipped cough medicine from a flask!...left at intermission with my soul full of music and was so happy to have had a glass of life that was half full that day
